Lentil casserole

My brother gave me this recipe for my wedding. We love it. It is very versatile. I normally serve it with nachos, cheese, salsa and sour cream but it also works as stuffing for wraps or as a rice dish.

This is my version of Mexical Lentil casserole a la Bitty

1. Cook up 1.5 cups of long grain rice as per package directions
2. Lightly fry 1-3 stalks of celery and a green pepper (cut up in small pieces) (my brother's recipe calls for onions in there as well)
3. Add 1 can tomato paste to the rice.
4. Add 1 can drained and rinsed lentils to the vegetables.
5. Add 1 package taco seasoning (I use reduced salt version)and 1tbsp. chili powder to the rice.
6. Mix the rice and veggies together.
7. Put in covered casserole dish in oven at 350 for 20-25 minutes.

It's pretty easy- takes about 30 mins to prepare as I cut the veggies while the rice is cooking.

here you get only dried lentils. They need to be soaked (overnight is best), and then cooked ... which takes time and thinking ahead :(

my brother's recipe actually uses dried lentils. if using them after frying the celery + green pepper (+ onions if desired) it says to add the lentils and 4 or 5 cups of water and cook for 40 minutes or so.
